Ingredients
  

For the Lava Cakes
  • 200 g 7 oz high-quality dark chocolate (60–70% cacao), finely chopped
  • 115 g ½ cup / 1 stick unsalted butter, cubed, plus extra for greasing
  • 2 large whole eggs room temperature
  • 2 large egg yolks room temperature
  • 150 g 1¼ cups powdered sugar, sifted
  • 60 g ¼ cup all-purpose flour, sifted
  • 1 tsp pure vanilla extract
  • ¼ tsp fine sea salt
  • 2 tbsp unsweetened cocoa powder for dusting ramekins
For Garnish & Plating
  • Powdered sugar for dusting
  • 4 scoops vanilla bean ice cream
  • Fresh strawberries sliced into hearts
  • Fresh raspberries
  • Fresh mint leaves
  • Edible rose petals optional
  • Raspberry coulis or salted caramel sauce

Instructions
 

For the Cakes

  • Preheat oven to 425°F (220°C). Grease 4 ramekins with butter, then dust with cocoa powder, tapping out excess. Place on a baking sheet.
  • Melt chopped chocolate and cubed butter together in a heatproof bowl over a pot of simmering water (double boiler), stirring until completely smooth. Remove from heat and cool 3–4 minutes.
  • Add powdered sugar to the melted chocolate and whisk until fully combined.
  • Add whole eggs and egg yolks, whisking vigorously for 1–2 minutes until smooth and slightly glossy.
  • Add vanilla extract and sea salt. Whisk to combine.
  • Sift flour over the mixture and fold in gently with a rubber spatula until just incorporated. Do not overmix.
  • Divide batter evenly among the 4 prepared ramekins, filling ¾ full.
  • Bake at 425°F for 12–14 minutes, until edges are set but the center still has a slight jiggle.
  • Remove from oven. Rest for 1 minute.

For the Garnish

  • Slice fresh strawberries into thin heart shapes using a paring knife.
  • Prepare raspberry coulis if using (blend raspberries + powdered sugar + lemon juice, strain).
  • Warm serving plates in the oven at 200°F for 5 minutes.

For Assembly & Plating

  • Run a thin spatula around the edge of each ramekin. Place a warmed serving plate on top and invert with confidence. Hold 5 seconds, then lift ramekin slowly.
  • Dust immediately with powdered sugar using a fine mesh strainer.
  • Add a scoop of vanilla ice cream to the side.
  • Arrange sliced strawberries, fresh raspberries, and a drizzle of raspberry coulis or caramel sauce.
  • Finish with fresh mint and edible rose petals. Serve immediately.

Notes

  • Make Ahead: Fill ramekins with batter, cover with plastic wrap, and refrigerate up to 24 hours. Bake cold with an extra 1–2 minutes added to the baking time.
  • Oven Timing: Every oven is different. On your first attempt, bake just one as a test cake and adjust timing accordingly.
  • Dairy-Free: Use coconut oil instead of butter and dairy-free dark chocolate.
  • Gluten-Free: Replace flour with almond flour or certified gluten-free 1:1 baking flour.
  • Extra Flavor: Add 1 tsp espresso powder to deepen the chocolate flavor without any coffee taste.
Serving Note: Lava cakes MUST be served immediately. The molten center sets as the cake cools, so have all garnishes ready before the cakes go in the oven.
