  • Kitchen thermometer
  • Small saucepan
  • Ladle
  • Fine mesh strainer
  • Zester or fine grater

Ingredients

For the Chicken & Braise
  • 1 whole chicken 3.5–4 lbs, cut into 8 pieces OR 3 lbs bone-in, skin-on chicken thighs and drumsticks
  • 1½ tsp kosher salt plus more to taste
  • 1 tsp freshly cracked black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter divided
  • 1 large yellow onion thinly sliced
  • 8 –10 cloves garlic crushed
  • 2 tbsp tomato paste
  • ¾ cup dry white wine Sauvignon Blanc or Pinot Grigio
  • 2½ cups low-sodium chicken stock
  • 1 tbsp Worcestershire sauce
  • 3 sprigs fresh rosemary
  • 6 –8 sprigs fresh thyme
  • 2 bay leaves
For the Vegetables
  • 3 medium carrots peeled, cut into 1.5-inch chunks
  • 3 medium parsnips peeled, cut into 1.5-inch chunks
  • 3 medium Yukon Gold potatoes quartered
  • 3 stalks celery cut into 1.5-inch pieces
For the Herb Pan Sauce
  • 1.5 cups reserved braising liquid
  • 1 tbsp cold unsalted butter cubed
  • 1 tsp Dijon mustard
  • Fresh thyme leaves from 2 sprigs
For Serving
  • Zest of 1 fresh lemon
  • ¼ cup fresh flat-leaf parsley roughly chopped
  • Flaky sea salt for finishing
  • Crusty bread for serving

Instructions

For the Chicken

  • Preheat oven to 300°F (150°C). Pat chicken pieces completely dry with paper towels. Season generously on all sides with kosher salt and black pepper. Let sit at room temperature for 20 minutes.
  • Sear the chicken: Heat olive oil in Dutch oven over medium-high heat until shimmering. Add chicken skin-side down in a single layer (work in batches if needed). Sear without moving for 5–7 minutes until deep golden brown. Flip; sear other side for 3–4 minutes. Transfer to a plate.
  • Caramelize the onions: Reduce heat to medium. Add 1 tablespoon butter. Add sliced onions and a pinch of salt. Cook, stirring occasionally, for 12–15 minutes until deeply golden and caramelized.
  • Add aromatics: Add crushed garlic; cook 2 minutes until fragrant. Add tomato paste; stir and toast for 1–2 minutes until darkened to brick-red.
  • Deglaze: Pour in white wine, scraping all browned bits from the bottom. Reduce 2–3 minutes. Add Worcestershire sauce and chicken stock. Add rosemary, thyme, and bay leaves. Bring to a gentle simmer.
  • Add vegetables: Add carrots, parsnips, and celery. Nestle seared chicken back into pot, skin-side up. Tuck potatoes in around the chicken. Liquid should reach halfway up the chicken — not submerge it.
  • Braise: Cover with lid and transfer to oven. Braise for 1 hour 45 minutes to 2 hours. Remove lid in last 15 minutes and increase temperature to 400°F (200°C) to crisp the skin.
  • Rest: Remove from oven. Let rest, uncovered, for 10 minutes before serving.

For the Herb Pan Sauce

  • Ladle 1.5 cups of braising liquid into a small saucepan. Bring to a brisk simmer over medium-high heat.
  • Reduce for 5–7 minutes until slightly thickened.
  • Remove from heat. Whisk in Dijon mustard, then cold butter cubes one at a time until glossy and emulsified.
  • Finish with fresh thyme leaves. Season with salt and pepper to taste.

For Assembly & Serving

  • Remove and discard herb sprigs and bay leaves from pot.
  • Transfer chicken and vegetables to a large serving platter or serve directly from Dutch oven.
  • Drizzle herb pan sauce generously over everything.
  • Zest one lemon over the entire dish.
  • Scatter fresh parsley over top. Finish with flaky sea salt.
  • Serve immediately with crusty bread.

Notes

  • Day-ahead method: This dish improves significantly when made a day ahead. Prepare completely, cool, refrigerate overnight. Reheat at 300°F for 30–40 minutes covered. The flavors deepen and the chicken becomes even more tender.
  • Do not skip the sear. The deep golden crust formed during searing is the foundation of this recipe's flavor. Wet chicken or a pale sear will produce a noticeably inferior result.
  • Liquid level matters: Too much stock dilutes the flavors. You want liquid at the halfway point of the chicken the chicken braises in steam and liquid, it doesn't swim.
  • Onion patience: Real caramelization takes 12–15 minutes minimum. Rushing this step means you miss out on the sweetness and depth that make the broth extraordinary.
  • Parsnips are essential: Do not substitute with turnips or more carrots unless absolutely necessary. Parsnips provide the signature slightly-sweet, earthy undertone that makes this broth different from every other braised chicken you've had.
  • Leftovers: Store in an airtight container, refrigerated, for up to 4 days. Freezes well for up to 3 months.
  • Slow cooker adaptation: Sear and build aromatics on stovetop as directed. Transfer to slow cooker. Cook LOW 6–7 hours or HIGH 3.5–4 hours.
